Paneer Bhurji | Scrambled Paneer | Paneer Bhurji Recipe
Paneer Bhurji is another local delicacy of North India. Paneer means Indian cottage cheese and bhurji means scramble, so it is scrambled cheese with some Indian spices. It is a breakfast item made with scrambled cottage cheese (paneer). This dish is adapted from the Egg Bhurji or Scrambled Eggs recipe made with Indian spices, especially for vegetarians. You can call it Mock Scrambled Eggs or Mock Egg Bhurji.
In this recipe, I have added some vegetables like grated capsicum and carrot to give it a healthy flavor. This dish turns out to be a healthy breakfast with the presence of paneer and vegetables. It is double nutritious as paneer is a great source of proteins, carrots improve eye health and lower cholesterol, and capsicum is an excellent source of vitamins A and C. You can add other vegetables like green peas, spinach or any vegetable that you feel is good for your nutritional growth.
Along with the health benefits of this paneer curry, it also tastes very delicious. It can be served with any bread such as Chapati, Bread, Pav, Roti, Paratha, or Naan. Also, it can be used as a stuffing for Kati rolls, spring rolls, grilled sandwiches, or simply as a starter for lunch or dinner.

100 gms grated or crumbled cottage cheese (paneer)
1 cup grated carrot
1 cup grated capsicum
1 medium-sized chopped/grated onion
1 medium-sized tomato
2 slit green chillies
7-8 small-sized chopped garlic cloves
1 cup finely chopped coriander leaves
1 teaspoon red chilli powder
2 tablespoons of oil
1/2 teaspoon garam masala
Salt to taste
Directions
- Heat 2 tablespoons of oil in a pot.
- Add chopped onions, turmeric powder, green chillies, and chopped garlic cloves. Cook until the onions become golden brown.
- Add grated carrots and capsicum. Mix all vegetables well.
- Add red chilli powder, garam masala, and salt.
- Add paneer and mix it well with the other vegetables. Paneer Bhurji is ready. Garnish it with coriander leaves.
Notes
- Fresh or homemade paneer and fresh vegetables have more health benefits.
- You can also add other vegetables of your choice to make it a more healthy breakfast dish.
- For people who are lactose intolerant can use tofu instead of paneer.
How to make Paneer Bhurji step-by-step?
Step 1: Heat 2 tablespoons of oil in a pot (kadai).
Step 2: Add 1 medium-sized chopped onion, ¼ teaspoon turmeric powder, 2 slit green chillies, and 7-8 small-sized chopped garlic. Cook until the onion is slightly golden brown.
Step 3: Add 1 cup grated carrot and 1 cup grated capsicum, 1 medium-sized chopped tomato, and mix it well.
Step 4: Add salt to taste, 1 teaspoon red chilli powder, and ½ teaspoon garam masala. Mix all ingredients and let it cook for one minute.
Step 5: Add paneer and mix it well with other ingredients. Garnish it with coriander leaves. Paneer Bhurji is ready.
